Sweet Pulled Pork
What you need:
4 lb (1.4 kg) butt (shoulder) pork roast*
4 tbsp chopped garlic
1 tsp pepper
1 tbsp thyme*
1 tbsp dijon mustard*
1 cup apple juice*
1 cup prepared bbq sauce*
6 buns*
Side serving of coleslaw*
What you do:
1)Preheat oven to 350ºF
2)Mix together garlic, pepper, thyme and mustard to form a paste, rub into pork roast and place in slow cooker or crock pot.
3)In a separate bowl, mix juice and bbq sauce, pour over pork.
4)Cover with lid. Cook on high for about 5 hours. Pork is done when very tender but not falling apart.
5)Remove pork, set aside to cool.
6)Place remaining liquid from slow cooker into a small saucepan and heat on stovetop until it thickens into a glaze.
7)Using two forks, shred the pork and place it back in the slow cooker.
8)Stir in the glaze and heat til desired temperature.
