Horseradish and Mustard Oven Roast

What you need:
5 lb (2.5 kg) oven roast*
4 garlic cloves, cut in half lengthwise
1/3 cup (75 mL) whole seed dijon mustard*
3 tbsp ( 50 mL) mayonnaise*
2 tbsp (30 mL) horseradish*
1 tsp (5 mL) liquid honey*
1 tsp (5 mL) salt
1 tsp (5 mL) pepper

What you do:
1)Preheat oven to 450ºF
2)Cut 8 slits in roast, inserting garlic into meat
3)Combine remaining 6 ingredients and cover roast, spreading evenly
4)Roast for 10 minutes. Turn heat down to 275ºF
5)Roast for 3-3 ½ hours or until meat thermometer reads 135ºF for medium rare, 4 hours or 145ºF for medium or until desired doneness. Place roast on cutting board and tent with foil for 20 minutes.
6)Carve against the grain (parallel to the strings) and serve
